Pasta Frittata
This is the perfect cure for that sad, dry leftover pasta in your fridge. It utilizes ingredients that everyone should have on hand at all times, and somehow turns into something elegant and impressive although it is one of the easiest recipes ever. I’ve been searching all my life for reasons to eat pasta for breakfast, and now I finally have one and I’m sharing it with you! You’re welcome.
Ingredients:
Leftover pasta (about ½ pound cooked which is ¼ pound dry) including anything you cooked it with (veggies, sauce, and pork product encouraged)
5 eggs
½ cup grated parm
Heaping spoon of ricotta (optional)
S&P
Butter
Preheat oven to 350 degrees. Crack eggs into medium bowl and whisk in grated parm and ricotta (if using), healthy pinch of salt and grinds of black pepper (Pro Tip: add red pepper flakes for a kick). Add leftover pasta and fold into egg mixture. Melt butter in a smallish oven-proof skillet over medium high heat. Add egg and pasta mixture and turn heat to low. Use spatula if needed to flatten the top and spread the mixture around, but don’t disturb the bottom. Once bottom is set (about 5 mins) place pan into oven until top hardens (about 10 mins). Remove from oven, top with parm and chopped fresh basil or any other fresh herb, and dig in! This is good hot or at room temperature.
