Miso Tahini Sauce

This sauce is my new fridge staple. Although miso is a decidedly Japanese ingredient, it lends a salty, rich, umami quality to tahini that makes the result so versatile. Use this sauce on salads, roasted vegetables, and even add a dollop to fried rice. You will not regret having it around!

Ingredients:
4 Tbsp Tahini (highly recommend Soom Tahini, available online)
2 Tbsp white miso paste (get this at any Asian market and it lasts forever in your fridge)
2 tsp white vinegar
1/4 cup hot water

Mix Tahini, white miso, and vinegar in a small bowl with a spoon until incorporated. At this point, the sauce will seem very thick (I use a spoon for this reason - the whisk gets really clumpy). Fill a 1/4 cup measuring cup with hot water and add half to the tahini mixture. Continue to mix, adding more hot water as necessary to get to desired consistency (I generally want it thicker when using on veggies, thinner when using as a dressing). Store in the fridge and use on any and everything all week! Especially good when mixed/topped with chile oil.
